Description
This warm and hearty dish is perfect for a cold, rainy day. With tender chicken and fluffy dumplings, this classic comfort food will be a family favorite in no time!
Ingredients
Scale
- 3β4 boneless chicken breasts
- 2 cans cream of chicken soup
- 1 can chicken broth
- 1 can biscuits (8 count)
- Salt & pepper, to taste
- Flour (for coating the biscuit pieces)
Instructions
- Prepare the Chicken:
- Place the chicken breasts in the bottom of a crockpot. Pour the 2 cans of cream of chicken soup and the can of chicken broth over the chicken.
- Season with salt and pepper to taste.
- Cook the Chicken:
- Cover the crockpot and cook on high for about 3 hours, or until the chicken is fully cooked and tender.
- Shred the Chicken:
- Once the chicken is cooked, use two forks to shred it directly in the crockpot. Stir the shredded chicken into the broth and soup mixture until well combined.
- Prepare the Dumplings:
- While the chicken is cooking, flatten each biscuit with your hands and cut each one into 4 squares.
- Lightly coat the biscuit pieces in flour, which helps to thicken the broth and prevent the dumplings from sticking.
- Cook the Dumplings:
- Drop the biscuit squares into the crockpot one at a time, stirring gently to prevent them from sticking together.
- Cover and continue cooking on high for another hour, or until the dumplings are fluffy and fully cooked through.
- Stir & Serve:
- Once the dumplings are done, gently stir the mixture to combine all the flavors. Serve hot and enjoy this cozy, comforting dish!
Notes
- Thicker Broth: If you prefer a thicker consistency, you can add a slurry of flour and water to the crockpot before adding the dumplings.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave.
