Description

Ingredients

  • 3–4 boneless chicken breasts
  • 2 cans cream of chicken soup
  • 1 can chicken broth
  • 1 can biscuits (8 count)
  • Salt & pepper, to taste
  • Flour (for coating the biscuit pieces)

Instructions

  • Prepare the Chicken:
    • Place the chicken breasts in the bottom of a crockpot. Pour the 2 cans of cream of chicken soup and the can of chicken broth over the chicken.
    • Season with salt and pepper to taste.
  • Cook the Chicken:
    • Cover the crockpot and cook on high for about 3 hours, or until the chicken is fully cooked and tender.
  • Shred the Chicken:
    • Once the chicken is cooked, use two forks to shred it directly in the crockpot. Stir the shredded chicken into the broth and soup mixture until well combined.
  • Prepare the Dumplings:
    • While the chicken is cooking, flatten each biscuit with your hands and cut each one into 4 squares.
    • Lightly coat the biscuit pieces in flour, which helps to thicken the broth and prevent the dumplings from sticking.
  • Cook the Dumplings:
    • Drop the biscuit squares into the crockpot one at a time, stirring gently to prevent them from sticking together.
    • Cover and continue cooking on high for another hour, or until the dumplings are fluffy and fully cooked through.
  • Stir & Serve:
    • Once the dumplings are done, gently stir the mixture to combine all the flavors. Serve hot and enjoy this cozy, comforting dish!

Notes

  • Thicker Broth: If you prefer a thicker consistency, you can add a slurry of flour and water to the crockpot before adding the dumplings.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave.
