- 1 large cabbage, chopped
- 2 small onions, diced
- 2 cans stewed tomatoes
- 1 pouch Lipton Onion Soup Mix (any flavor)
- 1 large celery stalk, chopped finely
- 1–2 lbs ground beef
- Salt, pepper, and other spices (optional)
Instructions
- Prepare the Vegetables:
- Chop the cabbage into small chunks and finely dice the onions and celery. These vegetables will form the hearty base of your soup.
- Boil the Vegetables:
- In a large saucepan, fill halfway with water and bring it to a rolling boil.
- Once boiling, carefully add the chopped cabbage, diced onions, and celery. Lower the heat and let it simmer until the vegetables are tender, about 15-20 minutes.
- Cook the Ground Beef:
- While the vegetables are simmering, heat a skillet over medium-high heat.
- Add 1-2 pounds of ground beef and cook until fully browned, making sure to break it up into smaller pieces as it cooks.
- Drain the fat to keep the soup light and healthy.
- Flavor the Soup:
- Add the Lipton Onion Soup Mix into the saucepan with the vegetables. Stir well to combine.
- You can season the soup with salt, pepper, or any other spices you prefer, such as paprika, thyme, or garlic powder for added depth of flavor. Simmer for another 5 minutes.
- Combine the Meat and Vegetables:
- Add the browned ground beef to the soup. Stir well to distribute the meat evenly throughout the soup.
- Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together.
- Taste and Adjust:
- Taste the soup and adjust the seasoning if needed. If you prefer a more robust flavor, feel free to add more of the onion soup mix or additional spices at this stage.
- Serve:
- Ladle the soup into bowls and enjoy hot. This cabbage soup is especially comforting on rainy days or as a light, healthy dinner!
